Scrambled Tofu

Breakfast is my favorite meal of the day. This Tofu Scramble Recipe is a vegan version of scrambled eggs and my favorite breakfast recipe! This scramble is loaded with plant protein and delicious spices. And crispy toast is always more scrumptious. They are complete sources of protein, providing all nutrients;low in calories; and relatively low in saturated fat.

Ingredients:
- 2 Tablespoon Olive oil
- 1 (400gm) extra-firm tofu, drained and patted dry
- 1 medium onion, diced
- 1 garlic clove, minced
- ¼ cup Cherry tomatoes halved
- ¼ cup cilantro chopped
- 1 tablespoon cumin powder
- 1 teaspoon turmeric powder
- Black pepper to taste
- Salt to taste
Getting it done:
- Break up the tofu into small pieces.
- Heat the oil in a skillet over medium-high heat. Add onion and garlic and sauté for 5mins or until brown. Add the spices as per taste. Add the tofu and cook for 5 to 7 minutes.
- Garnish with cherry tomatoes and Cilantro.
- Serve with Toast.
