Banana Pancakes
A Vegan Banana pancake is a flatten cake, thin and round, prepared from a Gluten free flour batter with non-dairy milk and Coconut oil or Vegan butter. Thick, fluffy, soft and sweet are perfect for fulfilling weekday Breakfast. Pair it up with fruits, maple syrup or chocolate sauce. Very easy and quick to make.
Ingredients:
- 1-2 Overripe Banana
- 1 cup Gluten Free Flour or Whole wheat Flour
- 1 Tablespoons powdered sugar
- 1 cup Non-dairy milk (Almond,Soy, Rice, oat)
- Coconut Oil as Required
- Gluten free Baking Powder
- 1/4 tsp salt
- 1 tsp cinnamon powder
- Maple syrup or sliced Bananas for serving
Getting it done:
- Mix dry Ingredients: In a large bowl, take flour, sugar, baking powder, salt and cinnamon powder and whisk to combine.
- Peel the Banana and mash them with the help of a masher. Add 1 tsp coconut oil and non -dairy milk and then mix all together.
- Mix the dry ingredients into banana mixture and whisk until smooth.
- Your batter will be ready. There will be possibilty of few lumps which is okay.
- Heat a Pan with oil and when hot add batter of about 2 tablespoon. As per your size of pan, you can make 3 pancakes at one time. Try to make small pancakes in size.
- Cook on one side, when bubbles appear on top side and the bottom side is golden-brown. Cook on low-flame to avoid any burn.
- Flip the pancake and add some oil, cook until other side is also golden-brown.
- Cook the panckaes for entire batter.
- Serve pancakes warm with bananas or maple syrup or fruit as per choice.
