Aloo Tikki
A simple and easy patty recipe made with boiled and mashed potatoes. The potato-based tikki is the foundation for many recipes like sandwich, burger,and many chaat recipes. Dish can be served with green chutney or tamarind chutney as starters.
Some easy and important tips. Firstly, you need to be very careful while boiling the potatoes. you can use a pressure cooker to boil these but has to be removed from water immediately the pressure is released. Otherwise the potatoes may absorb water and may not attain the tikki shape. Secondly, I have added oats powder which bind the veggies together, you can also use Bread Crumbs for same. Lastly, I have shallow fried these patties for less oil consumption. Alternatively you can also deep fry for a better crisp.
Ingredients:
- 4-6 Potato, Boiled and Grated
- 2 Chilli, Finely Chopped
- 1 Tsp Ginger Garlic Paste
- 2 tbsp Oats Powder or Bread Crumbs
- 1/4 Tsp Turmeric
- ½ tsp Cumin powder / Jeera powder
- ½ tsp Amchur / Dry mango powder
- 1 tsp Salt
- 2 tbsp Mint / Pudina, chopped
- 2 tbsp Coriander, chopped
- Oil, for frying
Getting it done:
- Firstly, in a large mixing bowl take 4-6 boiled and grated potato. make sure to pressure cook potatoes for 4-5 whistles and drain off the water as soon as pressure releases.
- Add 2 chilli, 1 tsp ginger garlic paste and ¼ tsp turmeric. Add ½ tsp cumin powder, ½ tsp aamchur and 1 tsp salt.
- Further add 2 tbsp mint and 2 tbsp coriander.Now add 2 tbsp Oats Powder and mix well alternatively use Bread Crumbs as it helps to absorb moisture.
- Mix well forming a soft dough.
- Grease hand with oil and prepare ball-sized tikki.
- Shallow fry in hot oil. you can alternatively roast or deep fry.Roast on low flame until it turns golden brown.Flip over and cook on both sides.
- Finally, enjoy aloo tikki with green chutney, tamarind chutney or prepare aloo tikki chaat.
