Jackfruit Burger with Coleslaw
Jackfruit grows in tropical areas of Southeast Asia.While it is technically a fruit, its consistency is similar to that of chicken or pork. It has a fairly neutral taste when raw, so it takes on the flavor of whatever sauce or seasoning you pair it with.The jackfruit texture is not dissimilar to a banana, mango, or pineapple in terms of being dense and fibrous. Some say it’s sweet, and some say a jackfruit has a flavor similar to pulled pork, especially when cooked.

Ingredients:
- 2 burger buns
- 1 can jackfruit
- 1/2 small onion chopped
- 1 garlic clove
- 3 tsp, Vegan BBQ Sauce
- 3 tsp, sugar free vegan ketchup
- 1/2 white cabbage, chopped finely
- 1 small carrot, chopped finely
- 1/2 small onion chopped
- 3 tbsp vegan mayonnaise
- 3 tbsp soya yogurt
- juice of 1/2 lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
Getting it done:
- For the cole slaw take cabbage, onion and carrot and Whisk together with, salt, pepper, mayonnaise, soya yogurt and lemon juice in a large bowl. Mix everything up thoroughly.
- Drain the jackfruit and rinse under cold water. Cut each piece of jackfruit in half and remove all the seeds. Cook the jackfruit with some olive oil in a large pan over medium-high heat until it gets some color. Add the onion and cook for another minute, then add the chopped garlic. Add vegan BBQ sauce and ketchup and 50 ml water to it, reduce the heat to medium-low and let it all simmer for 20-25 minutes.
- Once the jackfruit is tender, cook for 2 or 3 more minutes to get maximum flavour.
- To serve, place half of the jackfruit on the bottom of a burger bun and add 2 tablespoons of cole slaw and put the top bun on it.
- Serve with chips or French fries.
